Join local wild mushroom expert John Sir Jesse and French chef Bertrand Marchal for a day of discovery, delicacy and delight. Spend the morning on a guided foray into Telluride’s high country to learn about and gather a variety of edible local fungi. Then reconvene in the evening to transform the day’s harvest into a delicious dinner while learning the nuances of cooking wild mushrooms – whether the beloved chanterelle, the nutty King Bolete or the subtle Shaggy Mane.
Students should arrive at the Ah Haa School at 9:30 am to gather for the foraging portion of the class. We’ll arrange carpooling for students to the foraging spots. Wear comfortable shoes, bring sunscreen/hat, insect repellant, water, snacks or lunch, small sharp knife and cloth or paper bag for collecting.
